How To Roast Hazelnuts

Hazelnuts are one of those nuts whose flavor is dramatically improved by roasting. Raw, hazelnuts can be bitter and grainy. Roasted, they are fantastic.

Here’s how you do it:

Method

  1. Preheat the oven to 350 degrees.

  2. Put a single layer of hazelnuts on a cookie sheet.

  3. Put them in the oven.

  4. Wait 10-15 minutes, or until the skins are blistered. But don’t overdo it–they can burn, and that’s just not right.

  5. Dump them onto a double layer of kitchen towels (I put a hot pad or plate underneath as well to protect the counter top).

  6. Fold the towel over and let them sit for 10-15 minutes.

  7. Then, the really fun part. Pick the towel up like a little sack and rub the nuts inside together vigorously until the skins mostly rub off.

Don’t worry if the skins don’t come all the way off. The roasted skins add flavor. And that’s in a good way. But do give it a good go to get them most of the way. If you get sick of the towel method, you can also rub them between your fingers. It just takes longer because you can only do a few at a time.

Now you have roasted hazelnuts, ready to be used in toffee, brownies or even both together.

  1. I don’t think I’ve ever tried hazelnuts! I’ve found that most nuts taste better if they’ve been toasted. I won’t hardly eat walnuts without toasting them first now.It’s good to see you back and posting. I’ve missed it.

    I am looking for directions on how to roast hazelnuts BEFORE shelling them. Your recipe is appropriate for shelled nuts. What changes in temperature/time apply if the nuts are still in the shell?Thanks for any information.

  10. Hazelnuts’ peels are tough. ;)I had to rush to finish a salad w/ hazelnuts and needed to quickly choose between the roast-only method and the blanche-then-roast method. I picked the second one (boiling with baking soda; then using cold water — because I wouldn’t be able to rub off the peels from very hot freshly roasted nuts). Nevertheless, the peel still had to be rubbed off by finger — three to five nuts at a time, I tried to work fast!Roasting in a pan (not oven) worked well in the end, the aroma and flavour were great!

  11. I’m a 5th generation hazelnut farmer in Oregon (largest producer of the nut in the USA) and raw hazelnuts are not bitter- you just have bad rancid nuts. The nuts are not stored properly in bulk at stores so they go bad faster than other bulk nuts because they are higher in saturated fat- Omega 3 and 6. They are very good for your heart.
