Fast & Easy Turkey & Rice Soup



With hectic lives and busy schedules, meals often suffer. When looking for a quick, healthy alternative to fast food, throw this easy turkey and rice soup together in less than 30 minutes.

Ingredients:

1 lb ground turkey
1/2 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
10 cups broth or water with bullion
1/2 teaspoon salt
1/8 teaspoon marjoram
1/8 teaspoon thyme
1 tsp Bragg's Amino Acids or soy sauce
1/2 cup uncooked rice

Method:

1. In a soup pot, fry up ground turkey, leaving it chunky (if the turkey is very lean, add a tablespoon of olive oil). Stir occasionally while also chopping vegetables.

2. Add onions and saute for one minute.

3. Add carrots and celery. Saute for five minutes or until al dente (crisp tender).

4. Add all remaining ingredients (broth or bullion, salt, spices, Braggs or soy sauce, uncooked rice). Bring to a boil and simmer 20 minutes, or until rice is done.

5. Serve!

It takes some pretty spectacular photography to make a life-long vegetarian want to make turkey soup. You almost did it. Lovely!

That first photo is amazing. I just want to jump in it and bathe in that yummy soup. I love the white with the pops of color. I know this post is about the recipe, but I just can't get past that photo!
